Crustless Veggie Quiche

Ingredients

2 cups chopped veggie mix (onion, broccoli, peppers, mushrooms, etc.)

1 cup grated Swiss cheese

6 eggs

1-1/2 cups light cream

1/2 teaspoon salt

1/4 teaspoon pepper

1-1/2 Tablespoons fresh herb (rosemary, thyme, tarragon)

pinch nutmeg

pinch garlic powder

Parmesan cheese

Preheat oven to 350 degrees. Spray 8-inch pie pan with non-stick cooking spray. Layer veggies plus cheese in dish halfway to the top. Liberally beat eggs, cream, and spices together. Pour over veggies and cheese. Bake for 30 minutes at 350 degrees. Remove from oven and sprinkle with Parmesan. Return to oven for 15 minutes. Remove from oven and serve.
