Zucchini Nut Loaf

Ingredients:

1-1/2 cups flour

1 teaspoon cinnamon

1/2 teaspoon baking soda

1/2 teaspoon nutmeg

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup sugar

1 cup shredded unpeeled zucchini

1 egg

1/2 cup cooking oil

1/4 teaspoon shredded lemon peel

Mix together flour, cinnamon, baking soda. nutmeg, baking powder, and salt. Set aside.

Beat together sugar, egg, and shredded zucchini. Mix in well cooking oil and lemon peel. Stir flour mixture into zucchini mixture. Fold in 1/2 cup of chopped walnuts. Pour batter into greased loaf pan.

Bake in oven at 350 degrees for 55 to 60 minutes. Cool in pan for 10 minutes. Remove from pan and let cool on rack. Wrap and store. Freezes well.
