Ingredients Crust:

1 cup flour

1/4 cup brown sugar

1 cup ground pecans

1 stick melted butter

Filling:

8 ounces cream cheese

1/2 pint sour cream

1/3 cup sugar

4 ounces Cool Whip whipped topping

2 teaspoons vanilla

Fruit Topping:

2 to 3 cups sliced fresh fruit (strawberries, peaches, or kiwi)

2 Tablespoons orange juice

Crust: Preheat oven to 350 degrees. Mix all ingredients and press into a 9-inch to 11-inch tart or quiche pan, making crust very thin. Bake 10 minutes until light brown.

Filling: Whip cream cheese, sour cream, and sugar. Fold in whipped topping and vanilla. Spread onto tart crust.

Fruit topping: Toss fruit with orange juice; drain. Arrange on top of filling and garnish with mint leaves. Chill.
