Oatmeal Pecan Pancakes

Ingredients

1/4 cup pecan pieces

2 eggs

2 packets instant oatmeal (apple and cinnamon)

1 cup milk

1 teaspoon vanilla

1/2 teaspoon cinnamon

1 cup Bisquick baking mix

Brown 1/4 cup pecan pieces in a little butter and set aside. Combine eggs, packets of instant oatmeal, milk, vanilla, and cinnamon. Let sit for 30 minutes.

Add 1 cup Bisquick and pecans. Ladle onto hot griddle; turn when edges are dry.

Makes eight 4-inch pancakes. Serve with butter and your favorite syrup.
