Prairie Pies

Ingredients for Crust:

1/2 cup canola oil

2 Tablespoons sugar

2 Tablespoons milk

1/2 teaspoon salt

1-1/2 cups flour

Filling:

2 cups favorite pie filling, pudding or cream cheese with fruit

Crust: Combine oil, sugar and milk in medium-size bowl. Add flour and salt. Stir with a fork just until dry ingredients disappear. Form small balls of dough. Press each ball into a miniature muffin tin cup. Shape each into a small pie crust shape.

Bake at 400 degrees 10 to 12 minutes or until edges of crust are light brown. Cool crusts and fill with pie filling, pudding or cream cheese. Crusts can be made ahead and frozen until ready to use.

Filling: Fruit pie filling, pudding or cream cheese. Top pudding or cream cheese with tiny slices kiwi/strawberry or other fruit.
