Strawberry Bread

Ingredients

3 cups all-purpose flour

2 cup sugar

1 teaspoon cinnamon

1 teaspoon baking soda

1 teaspoon salt

3 eggs, well beaten

1-1/4 cups corn oil

Two 10-ounce packages frozen sliced strawberries, thawed

Line the bottom of 2 loaf pans with aluminum foil. Lightly grease the pans. In a large mixing bowl, combine the flour, sugar, cinnamon, baking soda, and salt. Make a well in the center of the well. Stir until the dry ingredients just become moist.

Pour the thawed strawberries and juice into a container. With a slotted spoon, dip out the strawberries and gently stir into the above mixture. Then add the juice gradually, stirring until the batter is of the proper consistency. The amount of juice varies in strawberries when thawed, and you do not want the batter to be too thin. Pour into the prepared loaf pans. Bake in a 350-degree oven for 1 hour or until the loaves test just done. Let cool in the pans for 15 minutes. With a knife, loosen sides of loaves from pans; turn out. Let loaves cool completely before slicing.

Makes: 2 loaves.
