Cheese Strata

Ingredients For 10 to 12 guests:

1 quart Sysco egg mix

1 loaf white bread

1/2 gallon milk

1/2 cup minced onion

3 Tablespoons Mrs. Dash seasoning

4 cups grated cheddar cheese

Use one 10 x 13 x 2-inch dish

Ingredients For 18 guests:

1-1/2 quarts Sysco egg mix

1-1/2 loaves white bread

1/2 gallon milk

1/2 cup minced onion

5 Tablespoons Mrs. Dash seasoning

6 cups grated cheddar cheese

Use one 10 x 13 x 2-inch dish and one 6 x 9-inch dish

(To serve 24, double the amounts of "For 10 to 12 guests" and use two 10 x 13 x 2-inch dishes.)

Mix all ingredients except bread and cheese in a large mixing bowl. Pour contents of bowl evenly into baking dish(es) sprayed with non-stick cooking spray. Remove all crusts from bread and tear into small pieces; scatter evenly throughout the dish(es). Add more milk if necessary to make the dish more "liquidy". Bake in a 350-degree oven for 1-1/4 to 1-1/2 hours. Cut into equal portions and serve with fruit garnish, sausage, and a muffin or sweet bread.
