The Honorable George H. Ryan former Governor, Illinois Specialty Recipe Pancakes

Dear Friends,
We are delighted to share a few of our favorite recipes. Raising six children has presented culinary challenges over the years. Our kitchen table provided a center of spirited discussions, shared hopes and dreams, and, of course, daily servings of advice, counsel and love.
We hope you and your family and friends enjoy this collection of recipes from our family cookbook and mansion staff.

Ingredients

2 large eggs

2 cups milk

4 Tablespoons vegetable oil

2 teaspoons vanilla

2 cups flour

2 Tablespoons sugar

2 Tablespoons baking powder

1/4 teaspoon salt

Using a whisk, whip eggs until fluffy, then add flour, milk, sugar, oil, baking powder, salt, and vanilla until smooth. If too thick, add milk. Heat skillet over medium heat and spray with non-stick spray. For each pancake, pour 1/4 cup batter into hot skillet. Cook pancake until puffed and dry around edges. Turn and cook until golden brown.

For blueberry pancakes, add 1/2 cup fresh or frozen thawed and well drained blueberries into batter.

For buttermilk pancakes, substitute one 1/4 cup buttermilk for milk and decrease baking powder to 2 teaspoons and beat in 1 teaspoon baking soda.

Makes: 3 to 6 pancakes.
