Gujarati Indian Eggs with Broiled Tomato

Ingredients

2 beaten eggs

1 Tablespoon water

1 teaspoon Masala mix*

1 Tablespoon butter

1 fresh tomato, cut into 1/2-inch slices

grated Parmesan cheese

lemon pepper seasoning

parsley

Asian chili sauce (optionally diluted with a light tomato sauce)

Combine eggs, water, and Masala mix and cook in a buttered frying pan as scrambled eggs or an omelet. Cover tomatoes with cheese and broil in the oven for a few minutes until done. Sprinkle cooked tomatoes with lemon pepper and service with eggs. Garnish with parsley and chili sauce mixture.

* Masala can be purchased at gourmet stores or mix your own. Masala mix: equal parts ground coriander, cumin, turmeric, mild chili powder, and 3 parts mild curry powder.
