Chicken Casserole Ole'

Ingredients

8 chicken breasts

Two 8-ounce packages cream cheese

3 bunches scallions

One 15-ounce can Hot Hormel Chili without beans

One 8-ounce jar medium or hot El Paso Taco Sauce

12 ounces Monterey Jack and 12 ounces grated Cheddar cheese

Sliced black olives (if desired)

First, gather your eight chicken breasts then cook, bone, and cube them. Pinch off pieces of the cream cheese and dot it on top of the chicken. Cut your scallions into 1-inch pieces and sprinkle them over the meat. Now for the kick, spread the hot chili across the tops of the chicken along with your medium or hot taco sauce. To top it all off, combine your Monterey Jack and grated Cheddar and spread it atop everything else. For a touch of color contrast, sprinkle sliced black olives on top.

Now simply layer the items in a 9 x 13-inch pan, bake at 350 degrees for 45 minutes, and prepare yourself for a treat! You may prepare this dish a day ahead.
