Oatmeal Cookies

The following recipe was a favorite of Governor and Mrs. Chiles. Mrs. Chiles is delighted to share this recipe and hopes you enjoy preparing it.

Ingredients

1-1/4 (2-1/2 sticks) cups margarine

3/4 cup firmly packed brown sugar

1/2 cup granulated sugar

1 egg (Egg Beaters egg substitute)

1 teaspoon vanilla

3 cups oats

1-1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cinnamon

1/4 teaspoon nutmeg

Heat oven to 375 degrees. Beat margarine and sugars until fluffy. Beat in egg and vanilla. Add combined flour, baking soda, salt and spices; mix well. Stir in oats. Drop by rounded tablespoon onto ungreased cookie sheet. Bake 8 to 9 minutes for a chewy cookie, 10 to 11 minutes for a crisp cookie.
