Breakfast Burritos

Ingredients

12 flour tortillas

12 eggs

1 can Hatch's green chile

Salsa (homemade or Salsa of your choice)

1-1/2 cups cooked crumbled sausage

6 lettuce wedges

6 tomato slices

salt and pepper to taste

1/2 cup diced tomatoes

1/2 cup chopped chives

1/2 to 1 cup shredded mozzarella cheese

little cream or milk (optional)

Cook sausage and crumble. Drain and set aside. Put eggs in bowl, add salt and pepper, and whisk all together. (I like to add a little cream to eggs.) Combine egg and sausage and scramble in frying pan till done. While eggs are cooking, put tortillas in microwave and warm for 1 minute. Put cooked egg and sausage mixture in middle of tortilla and roll. Place on cookie sheet, seam side down. Repeat with remaining tortillas and egg mixture.

Sprinkle shredded cheese on top of tortillas. Then sprinkle diced tomatoes and chopped chives. Cover with foil and put in warm oven until cheese is melted.

To decorate plate, pour green chili sauce on 1/2 of the plate (room temperature). Garnish top corner with a wedge of lettuce and tomato slices. Lay 2 tortilla rolls on middle of plate.

Serves: 6
