Walnut Caramel French Toast

Ingredients

1 cup brown sugar

1/2 cup butter

2 Tablespoons light corn syrup

1 cup chopped walnuts

16 slices French bread

Fresh peaches, sliced

6 eggs

1-1/2 cup milk

1 teaspoon vanilla

1 cup yogurt

1 cup sour cream

Combine brown sugar, butter, and corn syrup in saucepan and cook over medium heat until thickened, stirring constantly. Pour into a 9 x 13-inch pan sprayed with non-stick cooking spray. Sprinkle with walnuts. Place 1 layer (8 slices) of bread on the syrup and nuts. Top with approximately 3 to 4 peach slices on each slice of bread. Combine eggs, milk, and vanilla in blender. Pour half of mixture over the bread and peaches. Place a second layer (8 slices) of bread on top of peaches and cover with remaining egg and milk mixture. Cover with plastic wrap and refrigerate overnight.

Bake uncovered for 40 to 50 minutes at 350 degrees. Remove from oven and invert onto cookie sheet. Combine yogurt and sour cream. Spoon 2 Tablespoons of mixture over each serving of French Toast. Top with fresh peaches. Serve each person one double-layer serving.

Serves: 8.
