Pineapple Cake

Ingredients:

2 cups flour

2 cups sugar

1 teaspoon baking soda

1 teaspoon salt

2 eggs

1 large can crushed pineapple with juice

3/4 cup Wesson oil

Grease and lightly flour a 9 x 13-inch cake pan. Sift together dry ingredients. Add oil, pineapple, and eggs. Mix by hand. Pour into prepared cake pan and bake at 350 degrees for 30 to 35 minutes or until toothpick comes out clean.

Icing:

1/2 stick margarine or butter (very soft)

2 cups powdered sugar

1 small package cream cheese (very soft)

Mix ingredients together in a large bowl using an electric mixer. Spread icing on cake while cake is warm (not hot!). For consistency, you may need to add a little amount of milk to the icing.
