Cranberry Coffee Cake

Ingredients:

1/2 cup margarine

1 cup sugar

2 eggs

1 teaspoon baking powder

1 teaspoon baking soda

One 8-ounce can whole cranberry sauce

2 cups all-purpose flour

1 cup sour cream

1 teaspoon vanilla

1/2 cup chopped walnuts

Glaze

1/2 cup confectioner's sugar

1/2 teaspoon vanilla

1 Tablespoon milk

Grease and flour a tube pan. In a large bowl, cream together the butter and sugar. Add eggs one at a time, blending well after each addition. In a separate bowl, combine the dry ingredients. Add the dry ingredients to the creamed mixture, alternating with the sour cream and ending with the flour. Add the vanilla.

Pour 1/2 of the batter into the prepared tube pan. Top with 1/2 of the cranberry sauce. Add the remaining batter and top with the remaining cranberry sauce. Top with nuts. Bake at 350 degrees for 1 hour.

Glaze: In a medium bowl, combine the confectioner's sugar with milk and vanilla extract. Ice the cooled cake.
