Ingredients

3 pounds of potatoes

1 clove garlic

salt

1/3 cup butter

2 egg yolks

1/2 cup cream

1/2 pound mushrooms

1/4 cup minced parsley

pepper

Cooking time: 1 hour
Temperature 375 degrees

Peel potatoes, boil with garlic and salt until tender. Meanwhile, slice and saute mushrooms in 1 tablespoon butter. Mash potatoes with remaining butter. Beat egg yolks with cream and mix into potatoes along with mushrooms and parsley. Add more salt as needed and pepper to taste. Pile in buttered baking dish and bake at 375 degrees until brown (8 - 10 minutes).

Serves: 6 - 8
