Sunny Skies Muffins

Ingredients

2-1/2 cups flour

1/2 cup sugar

1 Tablespoon baking powder

1/2 teaspoon salt

1 cup canned crushed pineapple

1/4 cup coconut

1 egg

1 cup milk

1/4 cup melted butter or canola oil

Preheat oven to 375 degrees. Sift together flour, sugar, baking powder, and salt. Add the pineapple and coconut. Mix together very well, then add egg, milk, and butter or oil. Sprinkle tops with sugar. Cook in foil cupcake liners in muffin pan for 25 to 30 minutes until lightly golden brown.

Makes: 12 muffins
