Chili Cheese Egg Puff

Ingredients

1/2 cup margarine

1/2 medium onion, chopped

1 small green pepper, chopped

Jalapeno pepper to taste, chopped

10 extra large eggs

1 pound Monterey jack cheese, grated

2 cups creamy cottage cheese

1/2 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

Melt margarine with onion and peppers in microwave. Cool. In a large mixing bowl, beat eggs until blended. Add margarine, peppers, onion mixture, jack cheese, cottage cheese, flour, baking powder, and salt. Pour into a greased 9 x 13-inch baking dish. Bake at 350 degrees for 45 minutes or until set in the center.

Serves: 8 to 10
