Blintz Casserole (lowfat)

Ingredients for Batter:

2 eggs

1/2 cup flour

1-1/2 teaspoons baking powder

2 Tablespoons milk

1/4 cup melted butter

1/4 cup sugar

salt

Cheese Filling:

8 ounces non-fat cottage cheese

8 ounces low-fat cream cheese

1 egg

1 Tablespoon sugar

1 Tablespoon orange juice

cinnamon

salt

Toppings:

low-fat sour cream

strawberry jam

Preheat oven to 325 degrees. Spray 8-inch square pan with non-stick spray. Mix all batter ingredients in food processor and pour into measuring cup (will be about 1-1/4 to 1-1/2 cups).

Make cheese filling by combining all ingredients in food processor.

Pour about half the batter into greased pan and use a rubber spatula to spread it around so the bottom of the pan is completely covered. Top with cheese filling (dot with big spoonfuls, then spread out with spatula). It doesn't have to be perfectly even, but don't leave any bare spots. Pour remaining batter on top and spread around evenly. Bake for 45 minutes or until top is lightly browned. Cut in squares and serve. Top with sour cream and strawberry jam.
