Specialty Recipe

Country Breakfast Casserole

Ingredients

1 pound Jimmy Dean Roll Sausage

3 Tablespoons diced onion

4 cups day-old bread, cubed (or use seasoned croutons)

2 cups shredded sharp cheddar cheese (8 ounces)

10 eggs, lightly beaten

4 cups milk

1 teaspoon dry mustard

1/2 teaspoon salt

Pepper to taste

1/2 cup sliced mushrooms, canned (optional)

1/2 cup peeled tomatoes, chopped (optional)

Cook sausage and onion together; crumble and drain thoroughly. Grease well a 9 x 13-inch baking dish. Place bread in dish and sprinkle with cheese. Mix next 5 ingredients, including pepper, and pour evenly over bread and cheese. Sprinkle sausage, mushrooms and tomatoes on top of casserole. Cover and chill.

Must be chilled for 7 to 12 hours before baking. Bake in pre-heated oven at 325 degrees, uncovered, for approximately 30 minutes.
