Baked Apples

Ingredients:

5 cooking apples such as Granny Smith, Pippin or McIntosh

1/2 cup cranberries

1/2 cup walnuts

1/2 cup brown sugar

1/2 cup granola

1 teaspoon cinnamon

zest of 1 lemon

5 Tablespoons unsalted butter

Preheat oven to 375 degrees. Wash and core apples, then remove one-half inch from the bottom of each so they sit flat in the pan. Combine nuts, cranberries, sugar, granola, cinnamon, lemon zest, and butter. Stuff the apples with filling, generously mounding on top. Bake for approximately 25 minutes until filling is cooked and bubbly. Serve hot or cold, offering low-fat vanilla yogurt.
