Pesto Eggs

Ingredients:

5 large eggs

Oil

Grated Monterey Jack cheese

1 Tablespoon pesto

1 tomato

Italian seasoning

Parmesan cheese

This is so easy. In a bowl, crack eggs and beat until blended. Heat pan on medium and add a little oil to coat. Stir in eggs. When eggs are almost done, add a handful of Monterey Jack cheese and pesto. Cook until creamy and serve with sauteed tomato topped with Italian seasoning and Parmesan cheese.
