Ingredients

1 cup Sultans or raisins

1/2 cup Marsala

2 pound Ricotta cheese

6 Eggs

1/2 cup Flour

1 teaspoon Cinnamon

1 teaspoon Nutmeg

1 teaspoon Vanilla

1 Lemon, zested

1 Orange, zested

1 cup Sugar

Soak raisins in marsala for 1 hour.

Place ricotta in a mixing bowl and set mixer on low. Add the eggs one at a time until all are incorporated into the ricotta in a smooth, homogenous mixture.

Mix flour, cinnamon, nutmeg, vanilla, lemon, orange, and sugar together and then whisk into ricotta mixture until fully incorporated. Butter and flour one 10 inch spring form pan. Pour mixture into pan and bake at 350 degrees until set (approximately 45-60 minutes).
