Specialty Recipe

Apple Cake

Ingredients

2 cups peeled and diced or canned apple slices

1/2 cup to 1 cup sugar, depending on tartness of apples

3/4 cup safflower oil

1 beaten egg

1 cup flour

1 teaspoon cinnamon

1 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon vanilla

1/2 cup chopped walnuts

1/2 cup currants, plumped in water

Grated orange rind to taste

Place apples and sugar in a bowl. Let stand 1/2 hour or more. Add and mix together oil, egg, flour, cinnamon, salt, vanilla, baking soda, walnuts, and currants. Bake at about 350 degrees in well-greased 8-inch pan for 45 minutes or until inserted toothpick comes out clean. Cool in pan for 10 minutes.
