Specialty Recipe

Giovanni's Pollo Marinato

Ingredients

1 pound chicken breasts (boneless and skinned)

6 ounces good white wine

6 ounces olive oil

1 lemon for juice

1 teaspoon salt

1/2 teaspoon pepper

Fresh basil

Tarragon

Dill

3 cups whipping cream

3 ounces porcini mushrooms

3 ounces sun-dried tomatoes

12 ounces penne pasta

Grated Parmesan cheese to taste

Marinate chicken breasts in wine, olive oil, lemon juice, and spices for 2 hours. Boil water for pasta and cook approximately 15 minutes. Slice chicken into thin strips and cook in the whipping cream. When chicken appears almost done, add mushrooms, sun-dried tomatoes, and salt and pepper to taste. Toss with penne pasta and serve with grated Parmesan cheese on top. This recipe is compliments of our favorite restaurant, "Pastabilities."

Not suitable for freezing.
