Banana French Toast |

- Ingredients
- Four 1-inch thick slices of French bread
- 2 large bananas
- 2 large eggs
- 1 cup of milk or half & half
- 1 teaspoon vanilla
- 2 Tablespoons butter or margarine
- 2 Tablespoons vegetable oil or shortening
- 1/3 cup grated sugar mixed with 1 teaspoon of cinnamon
- Butter
- Syrup
Cut a 2- to 3-inch pocket in one side of each slice of bread.
Peel bananas, and first halve lengthwise, then crosswise.
Carefully stuff pockets with 2 pieces of banana per slice of
bread. Beat eggs, milk, and vanilla in shallow baking dish. In a
large skillet, melt butter and oil over medium heat. Dip both
sides of bread into egg mixture. Don't let bread get too soggy.
Fry about 2 minutes on each side until light brown. Dip in sugar
and cinnamon mixture (both sides). Keep in warm oven, about 225
degrees. Serve with maple syrup and butter. Enjoy.
