Eva's Shredded Apple Pie

Ingredients:

1 unbaked pastry shell

1 egg white

1/2 cup butter or margarine

1 cup sugar

2 eggs

4 to 5 apples, shredded like cheese

1 shredded lemon peel

Brush the pie crust with the egg white. Melt the butter and whip it until it is light and airy. Add one of the eggs at a time, then the apples, and then the lemon peel. Pour into the crust and bake at 325 degrees for 25 to 35 minutes. Enjoy with whipped cream or ice cream!
