Herb Baked Eggs
- Ingredients:
- 6 eggs
- 1-1/2 teaspoons Dijon mustard
- 1/3 cup plain nonfat yogurt
- 1-1/4 cups shredded cheddar cheese
- 1-1/2 Tablespoons chopped fresh chives
- 1-1/2 Tablespoons chopped fresh parsley
- 1/2 to 1 whole tomato, seeded and diced

Butter six ramekins. In a medium bowl, beat the eggs, mustard,
and yogurt. Stir in 1/2 cup of the cheese. In a small bowl, mix
together the chives and parsley. Add the diced tomatoes and half
of the mixed herbs to the egg mixture. Sprinkle with the remaining
cheese and herbs.
Place the filled ramekins in a pan filled with about 1/2 inch of
water. Bake at 350 degrees for about 45 minutes or until firm and
golden. Turn out onto serving plates and garnish with sprigs of
herbs. Serve immediately.
Note: You may use a 9 x 9 inch glass pan instead of
individual ramekins
