Cranberry Breakfast Cake

Ingredients for Batter

2 cups all-purpose flour

1 Tablespoon baking powder

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup sugar

1/2 cup (1 stick) unsalted butter, room temperature

2 large eggs

1 teaspoon vanilla

1 cup buttermilk

1 cup dried cranberries

Filling

1 cup chopped toasted walnuts

2 teaspoons ground cinnamon

1/2 cup sugar

Sifted powdered sugar

Preheat oven to 350 degrees. Spray a 12-cup bundt pan with non-stick cooking spray. Sift flour, baking powder, nutmeg, and salt together. Beat 1 cup sugar and butter in a large bowl until well blended. Add the eggs, 1 at a time, beating well after each addition. Beat in the vanilla.

Reserving 1 Tablespoon dry ingredients, mix dry ingredients into the butter mixture alternately with the buttermilk in 3 additions, beginning and ending with the dry ingredients. Mix dried cranberries with the reserved dry ingredients in a small bowl. Fold cranberries into the batter.

Mix the walnuts, cinnamon, and sugar in a medium bowl. Transfer 1/3 of the batter to the prepared pan and sprinkle half the nut/cinnamon/sugar filling over the batter. Add the second 1/3 of batter and sprinkle with the remaining filling. Add the remaining batter and spread evenly. Cut through the batter and filling a few times with a knife.

Bake the cake until a tester inserted near the center comes out clean, about 45 minutes. Turn off the oven. Open the oven door slightly. Let the cake stand in the oven with the door ajar for 10 minutes. Turn the cake out onto a rack and cool completely. Sprinkle with sifted powdered sugar. Cut into wedges and serve.
