Cheese Strata Ole'

Ingredients

6 slices French bread, large

2 cups jack cheese, grated

1/4 cup cheddar cheese, grated

One 4-ounce can mild diced chiles

1/4 cup finely diced onions

6 eggs

2-1/2 cups milk

salt and pepper to taste

Butter individual souffle dishes. Using a sharp knife or large biscuit cutter, cut each slice of bread into two rounds to fit the dishes. Place one slice of bread in each dish. Mix cheese, chiles and onions. Sprinkle 1/2 into each dish. Top with remaining bred slices and sprinkle remaining cheese mix over each. Beat eggs with milk and spices. Pour over layers. Cover and refrigerate overnight. Bake in 350-degree oven for 40 to 45 minutes or until golden and set.
