Oatmeal Muffins

Ingredients

1 cup flour

1 cup rolled oats (not quick)

1 cup buttermilk

1/2 teaspoon salt

1/2 teaspoon baking soda

1-1/2 teaspoons baking powder

1/2 cup safflower oil

1/2 cup brown sugar

1 beaten egg

Combine oats and buttermilk and soak for 1/2 hour. Sift flour, salt, baking soda, and baking powder together in a separate bowl. Add oil, brown sugar and egg to oat mix. Stir wet mixture into dry ingredients and barely blend to moisten. Spoon into greased muffin pans. Bake in 350 degrees oven for 20 to 25 minutes.
