Ingredients:
2 eggs
2 teaspoons milk or cream
1 Tablespoon mushrooms, chopped
Salt & pepper, garlic salt, seasoned salt, ginger, or thyme (to taste)
Toasted bread (I prefer whole kernel rye)

Moisten small bowl. Combine eggs, milk or cream, seasonings, and mushrooms in bowl. Place bowl in microwave oven on medium for 2 minutes; take out and redistribute mixture. Put back in for 2 minutes on medium or 1 minute on high for fluffy effect.

Remove omelette from bowl and put onto toasted bread. Choose shape of bowl to match shape of bread. Garnish with watercress or a sprig of herb, e.g., sweet marjoram.
