Specialty Recipe

No Crust Quiche

Ingredients:

5 eggs

1 cup milk (evaporated milk may be used)

1/2 cup biscuit mix

1/4 cup finely chopped onion

1/4 cup finely chopped red and green pepper

1/3 cup sliced mushrooms

5 slices cooked bacon, crumbled

1 cup grated cheddar and Swiss cheese (save 1/4 cup for topping)

1 teaspoon salt

1/2 teaspoon pepper

Tomato

Preheat oven to 375 degrees. Combine eggs, milk, and biscuit mix with whisk. Add the remaining ingredients. Pour into a greased 10-inch pie plate. Bake for 30 minutes. Remove from the oven and add 6 slices of tomato and top with remaining cheese. Return to the oven and bake approximately 10 more minutes or until eggs are set and a knife comes out clean.
