Apple Bacon Pancake Mix

Ingredients

1 Tablespoon butter

1 onion, sliced

1/2 pound sliced bacon

2 pears, peeled and sliced

2 apples, peeled and sliced

1/2 teaspoon thyme

3/4 cup flour

1 cup homogenized milk

2 beaten eggs

1/2 teaspoon salt

Heat butter in frying pan. Add onion and bacon and cook until softened. Stir in pears, apples, and thyme. Cook until heated thoroughly. Place flour in a small bowl. Add 1/2 cup of milk and beat well. Add eggs and remaining milk and bake well. Grease a 9 x 13-inch pan. Arrange fruit and bacon mixture in pan. Pour batter over the fruit. Bake at 350 degrees for 30 minutes until puffed and lightly browned. Cut into squares. Serve with warm maple syrup.
