Bed and Breakfast Apple Clafouti
(A Delightful Fruit-Filled Yorkshire Pudding)

Here's a refreshing change from the usual B&B fare which is always well received as a change of pace by bed and breakfast guests.

Ingredients:

1 cup flour

1/2 teaspoon salt

2 eggs

1 cup of 1% milk

1/2 cup cold water

Vegetable oil

2 large tart apples

3 Tablespoons sugar

Preheat the oven to 450 degrees. Combine flour, salt, eggs, milk and water in a bowl or a 4-cup measure. Use a hand-held blender, wire whisk, or electric mixer to beat until totally combined and smooth. Peel, core, and thinly slice apples; add to batter with sugar. Let stand in the refrigerator at least 1/2 hour. If you prefer, cover tightly with plastic wrap and refrigerate overnight. Thin with more cold water if the batter has thickened (this is critical if stored overnight as the batter will get thicker and will not rise as well).

Place about 2 Tablespoons of oil or shortening in a 9-inch deep pie plate. Place in the oven for about 5 minutes until very hot. Pull the shelf with the pie plate on it toward you and pour the batter and apples quickly into the hot fat. Push back the shelf and close the oven door as soon as possible. Bake about 30 to 40 minutes or until golden brown, puffed, and beautiful!

Sprinkle generously with sugar and cut into wedges to serve. Serve with maple-smoked bacon or sausages for a B&B breakfast that's bound to please.

Serves: 4 hungry Bed and Breakfast guests.
