Italian Sausage Frittata
There's nothing like a hearty breakfast to get
the guests are the Double D Guest Ranch ready to ride! This frittata
combines a nutritious breakfast of ranch-fresh eggs, Italian sausage
and fresh vegetables in one delicious meal. Guests help themselves to
homemade salsa,
sour cream and a sprinkling of chopped chives as garnishes. Serve with
fresh fruit, Apricot Triangle Biscuits and strong cowboy coffee! Let's
ride!
- Ingredients:
- 1-1/2 pounds sweet Italian sausage (discard
casings)
- 2 Tablespoons unsalted butter
- 1 large garlic clove, minced
- 3/4 pound mushrooms, washed and sliced
- Salt and pepper to taste
- 1/4 cup dry white wine
- 3 large Swiss chard or spinach leaves, thinly
sliced (about 2 cups)
- 1-1/4 cups Cheddar cheese, coarsely grated
- 9 large eggs
- 1-1/4 cups milk
- 1 Tablespoon Dijon mustard
In a large cast-iron skillet over moderate heat,
brown sausage, stirring and breaking up lumps. Transfer sausage with
slotted spoon to 9 x 13-inch glass baking dish, spreading evenly on
the bottom. Discard fat from skillet. Melt butter in skillet and cook
garlic and mushrooms that have been seasoned with salt and pepper.
Cook until mushrooms give off liquid. Add wine and continue cooking,
stirring occasionally, until liquid has almost evaporated. Spread
mushroom mixture over sausage and sprinkle with Swiss chard (or
spinach) and cheese.
In a bowl, whisk together eggs, milk and mustard
and pour over sausage mixture. Place in middle of 350-degree oven and
bake hour or until set. Let cool 10 minutes. Cut into serving sizes
and plate up!
