Huevos Poblanos

Ingredients

10 to 12 eggs, beaten

Mrs. Dash seasoning

1/4 cup dry onions

2 Tablespoons chopped parsley

24 ounces creamed cottage cheese

One 4-ounce can chopped chiles

1/2 pound cooked bacon, crumbled

1 cup grated cheddar cheese

Preheat oven to 350 degrees. Spray a 9 x 13-inch baking pan with vegetable coating spray. In a large bowl, whip eggs until frothy. Sprinkle 2 to 3 shakes of Mrs. Dash seasoning on top and stir in onions and parsley. Blend in each of the remaining ingredients gently. Pour into prepared pan. Bake, uncovered, 45 to 50 minutes.

Variation: Omit chiles and bacon and stir in 8 ounces of cooked turkey breakfast sausage, or omit chiles and bacon and stir in 2 cups diced ham.

Serves: 6 to 8
