Stuffed French Toast

This is served with Praline Sauce.

Ingredients

12 to 14 slices of cinnamon raisin bread, crusts removed.

4 ounces cream cheese at room temperature

1/2 cup crushed pineapple.

2 Tablespoon grated orange rind, optional

5 eggs, beaten

2-1/2 cups milk

1 teaspoon almond flavoring

1 teaspoon ground cinnamon

Preheat oven to 350 degrees. Spray a 9 x 13-inch pan with vegetable coating spray. Place a layer of cinnamon raisin bread evenly in bottom, cutting pieces to fit if necessary. Spread cream cheese evenly over each piece of cinnamon bead in pan. Spoon a tablespoon of crushed pineapple on each slice of bread, sprinkle with orange rind over the top. Place a second layer of bread evenly on top (like a sandwich). Blend eggs, milk, almond flavoring, and cinnamon together in a mixing bowl and pour carefully over bread. Cover pan with foil and let stand for 30 minutes or refrigerate overnight. Bake, covered, for 45 to 50 minutes, removing foil the last 15 minutes.
