Mexican Frittata

Ingredients:

1/4 cup butter

1/2 cup chopped onions

One 17-ounce can corn, drained

16 ounces chopped green chilies

1-1/4 teaspoon chili powder

18 eggs

1 cup sour cream

1/2 teaspoon salt

Dash red pepper

1/3 cup flour

3 cups grated sharp cheddar cheese

2-1/2 cups grated Monterey Jack cheese

Grease three 9-inch pie plates. In a skillet over medium heat, melt butter and saute the onion until soft. Add the corn, chili powder, red pepper, and salt. Simmer until flavors are well blended, about 15 minutes.

In a large bowl, whisk the eggs and sour cream together. Add the flour and beat until smooth. Add the sauteed mixture and the cheeses; stir until well blended. Divide mixture evenly between the pie pans. Bake at 350 degrees for about 1 hour. Cut the frittatas into wedges and serve with salsa and sour cream.
