Banana Blueberry Muffins

Ingredients:

3 cups all-purpose flour

1 Tablespoon baking powder

1 teaspoon baking soda

1 teaspoon kosher salt

1/2 pound soft butter

1 cup brown sugar

7 eggs

1 Tablespoon vanilla

6 bananas

3 pints blueberries

In a large bowl, add flour, baking powder, baking soda, and salt in a bowl and stir until blended. In an electric mixer bowl, cream together butter and sugar, then add eggs one at a time. Add vanilla. Stir egg mixture into bowl with flour and moisten thoroughly. Make sure flour ingredients are well blended into mixture -- no white specks. Add fruit ingredients and mix lightly. Bake at 400 degrees until a toothpick inserted in muffin comes out clean, about 20 minutes.

Yield: 2 dozen
