Garlic Cheese Grits

Ingredients:

1 cup instant grits

1-1/2 cups sharp Cheddar cheese, shredded

1/2 teaspoon minced garlic

1 stick butter or margarine

2 eggs, beaten

3/4 cup milk

paprika

Cook grits as directed on the box. Add cheese, garlic, and butter (or margarine). Cool. Combine eggs and milk. Add milk and egg mixture to grits. Pour into greased (I use Pam cooking spray) 2-quart casserole. Sprinkle with paprika. Bake uncovered for one hour in 375-degree oven. Note: This can be made the night before. Cover and refrigerate. Take out the next morning and bake in preheated oven.

Serves: 6 to 8

To serve 12 to 16, multiply quantities by 2 and use a 9 x 13 x 2-inch casserole.
