Huckabee's Hot and Happy Cajun Jambalaya

For suggested seasonings, I recommend Tony Chachere's Cajun seasoning (I use it instead of salt and pepper for just about everything). In my opinion, there must be Tabasco sauce. The table isn't set and the dinner isn't ready until the Tabasco is available! The jambalaya is good when freshly made, but actually is better several hours (or even a day) after it's cooked when all of the ingredients have "merged" into a wonderful and filling feast.

Ingredients

1 pound smoked sausage (use link smoked sausage, like Bryan's, Hillshire, etc.)

1 pound ground meat

1 bundle of fresh green onions

1 cup chopped bell pepper

2 cloves of fresh garlic

2 cups of rice

1-1/2 cups of fresh cooked black-eyed peas (optional)

Chopped parsley

Tabasco pepper sauce (optional)

Brown the sausage, drain the fat, and save the drippings. Saute onions, bell pepper, and garlic in the drippings. Remove onion mixture from pan and brown the ground meat. Cook the rice according to directions (for best results, use rice grown in Arkansas). Mix all ingredients into large pot or kettle. Add black-eyed peas, parsley, and seasonings.
