Ingredients:

2 cups diced zucchini (unpeeled)

1/2 small onion, chopped

1/2 cup Bisquick baking mix

2 eggs, beaten

1/2 cup Crisco oil

1/4 cup Parmesan cheese

1/4 Tablespoon parsley flakes

Salt and pepper to taste

Mix all ingredients together in order. Grease a 9-inch pie pan and pour mixture into pan. Bake at 350 degrees for 30 to 40 minutes until lightly browned.
