Ingredients

1 jigger of liquor chosen (bourbon, Scotch, rye, gin)

Carbonated water

Juice of 1/2 large lime (if making rickeys)

1/2 teaspoon sugar syrup (may use with dry liquors)

Into a 6-ounce glass, put 2 large ice cubes and add jigger of liquor. If making a rickey, add lime juice. Fill the glass with carbonated water. Stir lightly with bar spoon and serve. With dry liquors, you may add sugar syrup.

Variations: You can make a luxurious ricky by adding a teaspoon or so of liqueur to the lime juice. Try an applejack (apple brandy) highball or one made with Dubbonet. Vermouth Cassis: with a base consisting of 1 pony (1 ounce) of creme de cassis and 1 jigger (1 ounce) dry vermouth. Horse's Neck or Cooler: With a long neck or spiral of lemon peel draped over the edge of the glass and ginger ale substituted for the carbonated water. Spritzer: Half Rhine wine and half carbonated water.
