Popeye's Morning Breakfast

Ingredients:

Four - 10 ounce package frozen chopped spinach

2 cans cream of potato soup

2 cups sour cream

Monterey Jack cheese grated

Defrost spinach overnite on counter or in microwave. Mix soup, sour cream and spinach and place in individual serving baking dishes allowing 1/2 package spinach per serving. Make indentation in middle of dish and break egg into pace. Sprinkle with grated cheese. Bake at 350 degrees for approximately 30 minutes until egg is set and spinach is bubbly.

Makes: 8 serving cups
