Roland Gaujac's Raw Apple Muffins

Ingredients:

4 cups diced and peeled Granny Smith apples (1/4 inch in size)

1 cup sugar

2 large eggs, beaten lightly

1/2 cup corn oil

2 teaspoons vanilla

2 cups flour

2 teaspoons baking soda

2 teaspoons cinnamon

1 teaspoon salt

1 cup raisins

1 cup coarsely chopped walnuts

Preheat oven to 325 degrees. Mix apples and sugar. Mix oil, vanilla, and egg. Mix all dry ingredients. Stir egg mixture into apple mixture. Add flour mixture until well combined. Add raisins and walnuts. Bake for 25 to 30 minutes.

Note: Same recipe for Strawberry Rhubarb Muffins and Raspberry Muffins. Omit nuts and raisins and add more flour if necessary.
