Thousand Island Dressing

Thousand Island is a favorite in the South and Southwestern part of the United States, where it is an almost universal part of the Chicken Fried Steak Dinner. Because its base is ketchup (or sometime chili sauce), it became popular as an addition to green lettuce when salads were served with fried foods. Its popularity has now extended beyond its original uses and it now is seen as one of the most popular dressings in the country. At JCSF we make one important change to tradition. Instead of sweet pickle relish, we use dill relish and add sugar. This allows us to reduce the acid content from the tomatoes (the acid is why Thousand Island was popular with fried foods), yet keep the sweetness. It makes the dressing go much better with lighter fare.

Ingredients

1-1/2 cups chopped celery

1/2 cup dill relish

2 teaspoons sugar

1 Tablespoon Worcestershire sauce

1 cup ketchup

1 teaspoon Tabasco hot pepper sauce

2 cups mayonnaise

2 boiled eggs

Finely chop celery and boiled eggs and stir together with other ingredients.

Yield: 4 cups
