Almost all of the small flatfish available on the United States are flounder, and many flounder species are called "sole". The only true sole usually available in our markets is Dover Sole, imported from England. Dover sole has a firm texture, while the other varieties of flatfish have a softer texture -- a trait of flounder. Types of Flatfish
Halibut and Turbot are considered flatfish biologically, but for the purpose of the kitchen and cooking we treat them as we would treat bigger, heavier fleshed fish. Therefore, the method discussed in Fillet of Sole Meuniere is generally not appropriate for the thicker fillets of either Halibut or Turbot. |
