Crawfish Etouffee

Ingredients

3 cans chicken broth

1 medium bell pepper, chopped

2 medium onions, chopped

3 ribs celery, chopped

1 can cream of mushroom soup

1 medium can tomato sauce

1/2 can water

2 heaping Tablespoons of plain flour (for roux)

enough Wesson oil to make roux

1 Tablespoon parsley flakes

1 teaspoon accent

3 pods garlic, chopped

salt and pepper to taste

1/4 teaspoon sweet basil

1/4 teaspoon poultry seasoning

1 teaspoon Worcestershire sauce

1 teaspoon lemon juice

2 pounds crawfish tails (thawed)

1/2 cup green onion tops, chopped

Step 1: Mix flour and oil together to make paste. Put over medium heat and stir constantly until brown.
Step 2: In a heavy Dutch oven, add all ingredients except crawfish and green onions. Let this cook until vegetables are tender .
Step 3: Add roux and let cook for 30 minutes over medium heat.
Step 4: Add crawfish and green onions and cook for 10 minutes longer. Do not over cook after adding crawfish.
Step 5: Serve over hot bed of rice.
