Hot Potato Quiche

Ingredients

One 16-ounce bag frozen hash brown potatoes (I prefer chunky, not shredded)

1 cup shredded Pepperjack Cheese

1 cup shredded Swiss Cheese

1/2 cup half and half

6 eggs

1/4 teaspoon salt

1/4 teaspoon white pepper

Defrost potatoes for 5 minutes in microwave. Stir together potatoes and cheeses, then place in a greased 8 x 12-inch cake pan. In separate bowl, whisk together the half and half, eggs, salt, and pepper. Pour over potatoes and oven bake at 400 degrees for 45 to 60 minutes or until golden brown and set. Cool slightly and cut into 12 squares.
